Overnight oats are my jam during the work week or in the summer when you want a filling but cool breakfast that’s not going to heat up your kitchen. But cozy snow day weekend mornings call for pajamas all day, slow breakfasts, and lots of baking. Whenever I have time, I love to make oats on the stove top because there’s just something special about setting aside time to slow down and enjoy breakfast with a hot cup of coffee.
This porridge bowl is super easy and is loaded with all the flavors and health benefits one could possibly ask for in a quick breakfast. Are you as obsessed with turmeric as I am?
Holy moly, I’m talking curries, turmeric lattes, smoothies, you name it, I like to incorporate it into everything. Turmeric is an ancient anti-inflamatory spice used around the world for thousands of years. With it’s many antioxidant properties, why not try to sneak it into as many different types of meals as possible?
How to Make Banana Turmeric Oatmeal
Okay this is the easiest. It takes like five minutes. Add oats to one cup of water on the stove, along with 1/3 cup golden raisins. I used rolled oats, but you can do instant or old fashioned. The old fashioned might take a minute or two longer to cook.
Sprinkle in cinnamon, a dash of nutmeg, dash of salt, teaspoon of turmeric, and teaspoon of sugar. I used date sugar, but you can use traditional or even agave or maple syrup if you prefer.
As this is cooking, chop a banana and sauté in a pan with 1 tsp coconut oil. Once it gets a gooey caramelization to it, you know it’s finished.
Serving Suggestions
To serve, add the oatmeal to a bowl with a heap of peanut butter, large scoop of coconut shreds, large scoop of vegan yogurt, the caramelized banana, and hemp hearts.
This would also be super yummy with almond butter, cacao, or even chia seeds for more protein. If you made this recipe, tag me on Facebook or Instagram, and I would love to share your creation in my stories!
